Properties

  • Very robust yeast for the production of sparkling wines, Prosecco and crisp summer wines.
  • High fermentation and pressure tolerance in the sparkling secondary fermentation.
  • Excellent riddling properties and fast flocculation.
  • Emphasizes ideally fresh citrus and lime characters.
  • Low nutrient consumption.
  • Moderate SO2 formation, therefore ideal to suppress the MLF in sparkling secondary fermentation and crisp summer wines.
  • Free from emulsifiers, petrochemicals and other synthetic compounds.
  • Certified organic according EC regulations.
  • Ideal for crisp and juicy summer wines.

Description

Developed for sustainable winemaking, the VitiFerm™ BIO yeasts are being produced 100 % organically from the selection process through to the production plant. The yeasts fully comply with the current EC regulations No. 2018/848 and 889/2008 and hence also follow current USDA standards. They are absolutely free from emulsifiers and stabilizers.
